It serves as a versatile oxidising agent and nitrogen source across food preservation, industrial manufacturing, and energy storage applications.

Food: acts as a colour fixative and preservative in cured meats such as ham, sausage, and bacon, inhibiting microbial growth and preventing botulism.
Industrial: used in glass, enamel, ceramics, explosives, fertilisers, and as a metal cleaning or heat-treatment agent.
Energy storage: a key component of molten salt mixtures for concentrated solar power (CSP) thermal storage systems.
Chemical feedstock: raw material for producing potassium nitrate, nitrous acid, and other nitrates.

China's production capacity is around 1.3 million tonnes annually, with output roughly 1 million tonnes. Domestic consumption is led by the glass and explosives sectors, while demand for high-purity molten-salt-grade material is rising with CSP project development.
