Why is potassium carbonate more alkaline than sodium carbonate, and how does this affect industrial applications?

Potassium carbonate exhibits stronger alkalinity than sodium carbonate, particularly in concentrated solutions, due to its much higher solubility. At 0°C, potassium carbonate dissolves at about 107g per 100g water versus roughly 50g for sodium carbonate at its optimal temperature. This solubility advantage persists across temperatures, allowing formulators to achieve higher carbonate ion concentrations and thus stronger alkaline environments. Industrially, this matters: potassium carbonate solutions are preferred for CO2 absorption because they can be more concentrated, absorb more efficiently, and the resulting potassium bicarbonate is far more soluble than sodium bicarbonate, preventing crystallization and pipeline clogging. In food applications like noodle and bread making, potassium carbonate provides a slower, longer-lasting alkalinity that improves texture, gives a desirable yellowish tint, and enhances chewiness compared to sodium carbonate alone.
