The global gelatin market is undergoing significant consolidation. Rousselot, the world's largest producer, announced a strategic merger in May 2025, with final agreements signed by December. The deal, expected to close in 2026, will create a collagen protein giant with annual revenue around $1.5 billion and total capacity of approximately 200,000 tons across 22 production facilities worldwide. Rousselot's gelatin capacity has grown from 46,000 tons in 2000 to 80,000 tons recently, lifting its global market share from 17.5% to 25%. The top three players—Rousselot, Gelita, and PB Gelatins—control about 35% of the collagen peptide market. For Chinese buyers, this consolidation means stronger supplier bargaining power and potential price implications.
