How does sucralose compare with other sweeteners in terms of safety and regulatory acceptance?
Sucralose stands out as the only high-intensity sweetener derived from sucrose itself, offering sweetness 320-1000 times that of sugar with zero calories and no participation in human metabolism. It has received GRAS status from the US FDA, with JECFA setting an acceptable daily intake of 15 mg/kg. Unlike aspartame, which faces ongoing cancer concerns and is unsuitable for phenylketonuria patients, sucralose has no such restrictions. It is stable under high temperatures and low pH conditions, making it ideal for baking and acidic beverages. While some studies suggest high doses may alter gut microbiota composition, short-term human trials at 780 mg/day showed no significant changes. The sweetener is already used in over 4,000 food products across more than 100 countries, including soy sauce, vinegar, and baked goods.
